We slow cure our hams using dark sugars and spices for two weeks. They’re then dried and smoked over beech wood to produce a delicious flavorsome ham.

Our American style bacon is made from the belly, dry-cured and then hot smoked over beech wood before slicing, to create a crispy style rasher.

Dry Cured Streaky Bacon
All our bacons are dry cured with no water added to give a better more flavorsome bacon. Our streaky bacon made from the belly and sold ‘green’ (unsmoked).

Sliced Paris Ham Sliced
We slow cure our hams using dark sugars and spices for two weeks. They’re then dried and slowly poached to produce a moist flavorsome ham.

An Italian style bacon. Our Pancetta is dry-cured with garlic, fennel and black pepper and then rolled and aged for 4 weeks.
