FOLIES BANGKOK is the brainchild of Eric Cornille, a dynamic chef tenacious enough to believe that he could succeed in Thailand with croissants, typical french baguettes and puff pastry rolls !
30 years later, he managed to push the boundaries even further, exporting his meticulously manufactured products to Japan, USA, Australia and in numerous countries over the region.
What started like a small endeavor, in the back shop of a traditional local french bakery located in the small soi Amorn of Bangkok, has now turned into a full fledged 400 Ton’s production per year state of the art facility designed with a special attention brought to sustainability, quality and hygiene to answer the ever growing needs of the Thai market’s luxury hotels and high class restaurants for fine french pastry and bread.
Maintaining the traditional french bakery heritage nonetheless remains an artisan work done with dedicated little hands rolling and shaping baguettes and croissants in the wee hours of the morning, so that it can be delivered still warm on the tables and buffets of hotel’s guests, restaurants and coffee shops around the country.
After so many years FOLIES manages to constantly reinvent itself, by developing more traditional artisan like products, in line with ever more high demanding diet conscious clients, looking not only for gastronomical pleasure but also for more healthy alternatives richer in fibers, lower on refined ingredients and without additives. Using real traditional flours and french premium butter in plain respect of French bakery traditions.
